Create a hotkey to open a specific folder

I know this can be done, but I don't know how to create a workflow like that. Which template would I have to use?

From the Workflow [+] button, select Templates > Files and Apps > Launch file group from hotkey.

 

You can then configure the hotkey trigger and add the folder to the "Launch File / Apps" action.
